Chicken lollipop is an hors d'oeuvre popular in Indian Chinese cuisine. Chicken lollipop is, essentially a frenched chicken winglet, where in the meat is cut loose from the bone end and pushed down creating a lollipop appearance. It is usually served hot with Szechuan sauce.[1]

Recipe

Chicken lollipop is usually prepared using the middle segment of the chicken wing or thigh. The middle segment has one of the two bones removed, and the flesh on the segments is pushed to one end of the bone. These are then coated in a spicy red batter whose main ingredients include red chili powder, and turmeric.[2] The coated chicken is then marinated for a couple of hours. The marinated chicken is usually deep fried in oil, but another well-known choice includes baking. The bone end of the chicken lollipop is sometimes wrapped with an aluminium foil.

For preparing chicken lollipop, one can use either chicken wings or drummettes. It does not matter whether we are using chicken wings or drummettes, both can be frenched to get them into a shape of a lollipop. Drummettes are more suitable for beginners as they can be handled easily as compared to chicken wings. This quantity of the ingredients used in this recipe is ideally suited for serving 4 people. It can be adjusted according to the number of serves. The cooking time of this recipe is 25 min and preparation time is 1 hour which makes up to a total time of 1 hr 25 min.

Ingredients

Basic Ingredients: ½ Kg chicken, oil as required,

Ingredients for Marination: 1 ¼ tablespoon garlic paste, ½ tea spoon chilli powder, ½ tea spoon spice powder, 1/8 tea spoon salt and 4 table spoon corn flour

Ingredients for Seasoning: 1 medium sized onion, ¾ table spoon garlic paste, ¾ table spoon ginger paste, 1 tea spoon vinegar, 1 tea spoon soya sauce, ¾ table spoon chilli powder, ½ cup water, 1 tea spoon sugar

You would also need fresh coriander or celery for garnishing

Steps for Preparation

1. Take a bowl and put some yogurt (3-4 table spoons) and add some water (1 ¼ cup) and salt after whisking yogurt properly.

2. Soak chicken in this paste for 1 hour.

3. Now let the buttermilk drain off and marinate chicken.

4. Grill prepared pieces of chicken until cooked.

5. Fry onions in a bowl and soya sauce and vinegar sauce.

6. Cook chicken after adding chili paste and sugar until sauce looks thick.
